Pain de Campagne - “French Farm Bread.” Just another name for the rustic sourdough I used bake each week for the Burien Farmers Market. These loaves are the same size (2.2 lbs), but the shape has changed so that I can fit 12 loaves at a time in my new oven! Made with T-85 flour from the imitable Cairn Spring Mills in the Skagit Valley. Local as local gets!
